This creamy, decadent pasta is an amazing flavor combination of sweet butternut squash and savory "bacon." And it's a snap to get ready, so you can eat a gourmet tasting meal in under 30 minutes! (Mascarpone cheese is the creamy cheese used in tiramisu, it can usually be found by the brie, gouda and other premium cheeses at your grocery store. Or you can sub cream cheese.)
You'll need:
Campanelle Noodles- 8 oz.
Butternut Squash- skinned, diced-1 10 oz. bag (I use Stahl Bush Farms frozen cooked & cubed bags)
Mascarpone Cheese-4 oz. (can sub light cream cheese)
Morning Star fake bacon- 5 slices chopped (*optional but adds savory, salty flavor)
Garlic- 2 cloves, minced & cooked
Salt & Black Pepper- to taste
Nutmeg- pinch

You'll need:
Campanelle Noodles- 8 oz.

Directions
Boil pasta water with salt. Add noodles and cook according to box.
Meanwhile microwave frozen butternut squash 2-3 minutes in bowl and mash.
Mix mascarpone or cream cheese into squash. Microwave fake bacon 1 minute & chop. Stir in garlic and bacon. Season with salt, pepper & nutmeg.
Strain noodles & pour into squash sauce and mix. Season to taste. Sprinkle with shredded parmesan if desired.
