This was my first try at grilling pizza, so it wasn't absolutely perfect technique, but it was still sooo good! I was really nervous about putting the dough on the grates, but I promise it somehow doesn't goop through. So just trust me.
You'll need:
Pizza dough- store bought or make your own
Zucchini-1
Cherry tomatoes- 15-ish
Goat Cheese- 3-4 oz., crumbled
Fresh Basil- 10 leaves, chopped
Garlic- 2 cloves minced & sauteed
Put grill heat on medium.
Cut off top of zucchini, slice into long strips, about 1/2 inch thick. Brush with olive oil. Salt.
Put the zucchini on the grill for about 2 minutes on each side.
Make sure your dough is even, without any super thin spots or holes. This was my mistake, and part of it almost broke away. Brush both sides of dough with olive oil and place on grill for 2 minutes. (Keep an eye on it, it cooks fast!) My other mistake was that the back of the grill cooked the dough much faster, and we ended up with half the pizza a little ovedone...
Remove the zucchini from the grill. Then slide pizza off the grill onto a cookie sheet, flipping it so the cooked side is UP. Top the cooked half with the olive oil/basil/garlic mix, goat cheese, chopped cherry tomatoes and grilled zucchini. Place back on grill- the uncooked side on the grates. Close top- cook 3-4 more minutes.
