strawberry-pineapple trifle

I fancy myself a pretty good cook, but I admit I can't really bake. I'm afraid I'll screw it up when I'm asked to bring a dessert somewhere, so I like to stick with simple desserts that can't really be messed up. This easy summer dessert is delicious and light, so it's a perfect dessert for a cookout or picnic. I call this little diddy-Summer Delight Cake or Strawberry and Pineapple Trifle. I always bring the bowl home empty!

Strawberries & blueberries on top are perfect for Fourth of July or Memorial Day!

You'll need:
Fresh Pineapple- 16 oz., chopped
Strawberries- 2 lbs (2 packages) hulled & sliced
Angel Food Cake- 1 premade cake (or make your own)
Vanilla Pudding- 2 packages of Instant Jell-O (or 6 snack packs)

Cool Whip- 1 extra large container
Optional: Blueberries, raspberries or bananas


I recommend preparing the  fruit the day before:
Cut off tops of strawberries, slice into strips. Slice pineapple. Refrigerate in bowls for several hours or all day until they have time to get nice and juicy to soak into and moisten the cake.


Assemble pudding if not using Snack Packs.

Tear angel food cake into small cubes.

In glass bowl- layer angel food cake, strawberries, pineapple and any other fruit, then pudding. Repeat. 

Top with smooth layer of cool whip and decorate with fruit.
