lentils with rice, cheddar + broccoli

First off- sorry I've been slacking on posting. Someone stole my camera, so it's kind of hard to post my recipes! It's about time for me to get a better one anyways, but for now you have to deal with my cell phone pics. 


Lentils, rice, broccoli and cheddar cheese just go so well together. It can be enjoyed as a side, or as an entrée for dinner. You're getting your protein, a carb, veggie nutrition from broccoli & lentils- and the always wonderful flavor of cheddar cheese.






You can saute onion and/or garlic in the pot before hand, then add your broth and rice. But to be honest, I skip that step sometimes and just season with garlic salt. 


You'll Need:
Lentils- 1 cup
Brown Rice- 1 cup
Vegetable Broth- 5 cups  (or 5 cups water + 1 vegetable bouillon cube)
Broccoli- 1 bag fresh florets
Sharp Cheddar Cheese- a sprinkle, a handful... however much you need!
*Could add cooked Quorn faux chicken too


Mix lentils, rice and broth in casserole dish. Bake 40 minutes at 350. 


Steam/saute/boil broccoli or any veggies you want. 


Taste rice and lentils to make sure they are fully cooked & tender. 

Stir in cheddar cheese and cooked broccoli to lentil rice mixture.
