apple cinnamon bread pudding

I have been on a bread pudding kick lately. I love the texture and the way all the flavors blend together and I love a wholesome weekend breakfast you can make the night before and then pop in the oven.  


You'll Need:
Apples- 4, sliced
Bread- 6 slices- cut into 1" cubes (stale is better)
Butter- 1-2 tbsp.
Eggs-2
Egg Whites- 2
Vanilla Extract- 1 tsp.
Milk/Soy or Almond- 2.5 cups
Sugar- 1/4 cup
Brown Sugar- 1-2 tbsp.
Cinnamon- 1 tsp.
Salt- pinch

Preheat oven to 350.

Butter or spray bottom of a 2 quart casserole dish. Line with apples. Sprinkle a bit of brown sugar and cinnamon. Top slices with a few slices of butter. 


Bake apples 10 minutes. (Smells like pure heaven.)

Whisk together, eggs, egg whites, vanilla and sugars. Gradually add milk. 

Add bread to milk mixture and toss. Season with cinnamon and a pinch of salt. 

Pour over apples. Sprinkle more cinnamon on top and bake 40-50 minutes- until knife comes out of center clean.

    1. Yes, you can prepare it early. I make it the night before and then bake it in the morning!
