turban headbands

One of my spring must-haves is a turban headband. I ordered a turquoise one from an Etsy seller, because when I'm shopping for such a specific item/color, I'd rather buy online than search the mall for hours and settle.

I recommend getting colors that contrast your hair, so lighter colors for brunettes, and black and bold colors like blue for blondes. Teal and white look great on redheads. I love turquoise for my dark hair because I can wear it with black or lighter color outfits this spring & summer.

Turban headbands are also a quick fix for that dreaded second-day hair that can start to look greasy. You can also throw one on to go to the beach to keep it in place.

lentils with rice, cheddar + broccoli

First off- sorry I've been slacking on posting. Someone stole my camera, so it's kind of hard to post my recipes! It's about time for me to get a better one anyways, but for now you have to deal with my cell phone pics.

Lentils, rice, broccoli and cheddar cheese just go so well together. It can be enjoyed as a side, or as an entrée for dinner. You're getting your protein, a carb, veggie nutrition from broccoli & lentils- and the always wonderful flavor of cheddar cheese.

You can saute onion and/or garlic in the pot before hand, then add your broth and rice. But to be honest, I skip that step sometimes and just season with garlic salt.

You'll Need:
Lentils- 1 cup
Brown Rice- 1 cup
Vegetable Broth- 5 cups  (or 5 cups water + 1 vegetable bouillon cube)
Broccoli- 1 bag fresh florets
Sharp Cheddar Cheese- a sprinkle, a handful... however much you need!
*Could add cooked Quorn faux chicken too

Mix lentils, rice and broth in casserole dish. Bake 40 minutes at 350.

Steam/saute/boil broccoli or any veggies you want.

Taste rice and lentils to make sure they are fully cooked & tender.

Stir in cheddar cheese and cooked broccoli to lentil rice mixture.

Enjoy!

vegetarian stuffed cabbage

Stuffed cabbage was one of my all time favorites before going vegetarian, and filling it with rice and tomatoes just wasn't quite doing the trick for me... Then I started filling the cabbage with my vegetarian meatloaf, and the world has been a better place. Stuffed cabbage is back in my life to stay, baby.

I like to prep the meatloaf the day before, so then I can simply pop these in the oven when I get home.

You'll Need:
Cabbage- 1- leaves ripped off
Spaghetti Sauce- 8 oz.
Shredded Italian Cheese- as desired
Vegetarian Meatloaf- uncooked (I sub Italian cheese for cheddar in meatloaf for this recipe)

Spray casserole dish. Pour a little spaghetti/tomato sauce in bottom of pan.

Bring pot of water to boil. Place whole cabbage leaves in water for 2-4 minutes to soften. (No longer!) Stack leaves on a plate when done.

Place a spoonful or two of uncooked veggie"meatloaf" in the center of each cabbage leaf and roll up. (Fold in each side, then roll top to bottom like a burrito.)

Pour spaghetti sauce/tomato sauce over top of cabbage rolls. Top with cheese.

Bake 30-45 minutes on 350.

the perfect air travel outfit

As the busy season for air travel winds down, I have finally perfected my air travel outfit. This is my go-to to travel in style from now on. Comfort is obviously a big factor when traveling, and while some board in a Forever Lazy, if you're like me, you still want to look presentable. But with the plane changing from hot and stuffy to freezing and dry it can be hard to find the best outfit for air travel... but here it is. I give you the perfect outfit for air travel:

Scarf- perfect way to stay warm mid-flight.

Oversize Cardigan- comfy, cozy, warm. Easy to take on and off since there's no hood, buttons or zippers.

Long Tank Top- Basic and nice to have underneath for when the plane is stuffy pre-takeoff.

Black Leggings- Comfortable and non-restrictive without looking like a total bum.

Flat Ankle Boots- Always remember to wear socks when flying! I used to wear ballerina flats when traveling, but then when the time came to remove my shoes, I would be stuck tip-toeing disgustingly barefoot through security.

*Tip for flying cold to hot: Substitute simple black dress for tank top OR pack shorts and sandals in your carry-on. Change after landing.
